Miso Garlic Roasted Cauliflower

Tender cauliflower florets roasted to golden perfection in a savory miso garlic glaze—crispy on the outside, umami-packed on the inside!

Ingredients

1 medium head cauliflower, cut into florets

2 tbsp white miso paste

2 tbsp olive oil

1 tbsp rice vinegar or lemon juice

1 tbsp soy sauce

2 cloves garlic, finely minced

1 tsp maple syrup or honey

Red pepper flakes (optional)

Chopped parsley or green onion, for garnish

Directions

1️⃣ Make Marinade:

In a small bowl, whisk together miso paste, olive oil, vinegar, soy sauce, garlic, and maple syrup until smooth.

2️⃣ Toss Cauliflower:

In a large bowl, toss cauliflower with the miso mixture until fully coated.

3️⃣ Roast:

Spread florets on a parchment-lined baking sheet. Roast at 425°F (220°C) for 25–30 minutes, flipping halfway, until golden and crisp on the edges.

4️⃣ Garnish & Serve:

Sprinkle with parsley or green onion and a pinch of red pepper flakes, if desired.
