Salmon & Shrimp Breakfast Plate 🥑🍳🐟

Ingredients:

1 salmon fillet

3 large eggs

4–5 shrimp, peeled and deveined

1 slice of sourdough or whole-grain bread

½ avocado, sliced

1 tbsp cream cheese or feta

1 cup arugula or mixed greens

4–5 cherry tomatoes, halved

Olive oil, salt, pepper, and lemon juice

Instructions:

  1. Cook the salmon: Heat olive oil in a pan and sear the salmon for 3–4 minutes per side until golden and flaky.
  2. Make the scrambled eggs: In the same pan, sauté shrimp until pink, then add beaten eggs, season, and stir until softly scrambled.
  3. Toast the bread and spread a touch of butter or olive oil if desired.
  4. Assemble the plate: Add salmon, shrimp eggs on toast, avocado topped with cream cheese, and a side of salad.
  5. Drizzle lemon juice over the salad for freshness.
