1 New York strip roast (about 4–5 lbs)
2 tsp salt (or to taste)
1 tsp black pepper
4 tbsp unsalted butter, softened
3 cloves garlic, minced
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
Instructions:
Preheat your oven to 500°F (260°C).Prepare the roast: Pat the roast dry with paper towels. Season all over with salt and pepper.Make the butter rub: In a small bowl, mix softened butter, garlic, and thyme until well combined.Rub the butter mixture all over the outside of the roast.Roast: Place the roast fat-side up on a rack in a roasting pan. Roast at 500°F for 5 minutes per pound
(for example, a 4 lb roast = 20 minutes).
Turn the oven off and do not open the door. Let the roast sit in the oven for 2 hours without peeking — the residual heat will cook it perfectly.Rest: After 2 hours, remove the roast from the oven and let it rest for about 20 minutes before slicing.
