Ingredients:

1 lb ground beef (85% lean)1 onion, chopped

1 green bell pepper, chopped (optional)

2 cloves garlic, minced

1 cup ketchup

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon chili powder (optional, for a little kick)

Salt and black pepper, to taste

2 cups shredded cheddar cheese (divided)

1 (32 oz) bag frozen tater tots

Instructions:

Preheat oven

Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook the beef Mixture

Spread the sloppy joe beef mixture evenly into the prepared baking dish.Sprinkle 1 cup of shredded cheddar cheese on top.Arrange the frozen tater tots in a single layer over the cheese.BakePlace the casserole in the oven and bake uncovered for 30–35 minutes, until the tater tots are crispy and golden brown.

Finish with cheese

Remove from the oven, sprinkle the remaining 1 cup of cheese over the tots, and return to the oven for another 5 minutes, or until the cheese melts.
