Recipe
RECIPE Marinated Cucumber, Onion, and Tomato Salad
Yields: 4-6 servings Prep time: 15 minutes Chill time: At least 30 minutes (recommended)
Ingredients:
2 large cucumbers (English or regular, peeled if desired), sliced into
1/4-inch thick rounds or half-moons
2-3 medium ripe tomatoes, cut into wedges or thick slices, then halved
1/2 large red onion or
1 small white onion, thinly sliced into rings or half-moons
1/4 cup apple cider vinegar (or white vinegar)
2 tablespoons olive oil
1-2 tablespoons granulated sugar (adjust to your sweetness preference)
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
Optional:
1/4 cup chopped fresh dill or parsley for garnish
Instructions:
Prepare Vegetables:
Slice the cucumbers, tomatoes, and onion as described. Place them in a large bowl.
Make the Marinade:
In a small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and black pepper until the sugar and salt are dissolved. Taste and adjust seasoning as desired – if you prefer it tangier, add more vinegar; if sweeter, add more sugar.
Combine and Marinate:
Pour the dressing over the vegetables in the large bowl. Toss gently to ensure all the vegetables are well coated.
Chill:
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 1-2 hours.
Serve: Give the salad a final gentle stir before serving. Garnish with fresh dill or parsley if desired.
